Mocha Protein Pancakes

Mocha Protein Pancakes

Ingredients

1 cup rolled oats

180 ml milk of choice (I prefer almond milk)

3 pasture-raised or organic eggs

3 medium bananas

2 tablespoons cocoa or cacao powder

4 teaspoons coffee powder (I use The Healthy Chef Collagen Coffee)

2 tablespoons protein powder of choice (I use The Healthy Chef Organic Pea Protein)

3 teaspoons baking powder

1 tablespoon lemon juice

Fruit, yoghurt and maple syrup to serve (optional)


Instructions

Add all the ingredients to a blender and blend until everything is well combined.

Heat a non-stick pan over low heat.

Lightly grease with butter, olive oil, or coconut oil.

Spoon in 2 tablespoons of mix per pancake.

Cook over low heat for 2 to 3 minutes or until bubbles form on the surface.

Flip over and cook the other side until golden brown.

Serve with fruit, yoghurt, maple syrup and enjoy!
